Don’t be alarmed if the omelet has a strange shape—the egg will rise during cooking. To prevent this from happening, cover the egg mixture tightly with plastic wrap.

- 2 eggs
- 2 Tbsp. milk
- 1⁄4 tsp. salt
- 1⁄8 tsp pepper
- 1 Tbsp. butter
- 1⁄4 cup grated Cheddar cheese
- In a small bowl, lightly beat the eggs with the milk. Stir in the salt and pepper.
- Place the butter in a microwave-safe shallow bowl. Microwave on high heat for 15 seconds or until the butter melts.
- Pour the egg mixture into the butter and stir to mix. Microwave on high heat for 2 minutes, until the egg mixture is nearly cooked. Add the grated cheese on top. Microwave for another 30 seconds or until the cheese melts.
