  • 1⁄4 cup butter
  • 2 oz. unsweetened chocolate
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp. baking powder
  • 1 tsp. vanilla extract
  • 1⁄2 tsp. salt
  • 2 cups all-purpose flour
  • 1 cup confectioners’ sugar

  • In a bowl, combine the butter and chocolate and microwave on medium for 1 to 4 minutes, or until melted. Stir well. Beat in the granulated sugar, eggs, baking powder, vanilla, and salt until well mixed. Stir in the flour. Cover and refrigerate overnight.
  • The next day, shape the dough into 1-inch balls and roll in confectioners’ sugar. Put 6 to 8 balls in a large ring on a parchment paper–lined microwave proof baking sheet, dinner plate, pie plate, or paper plate. Put a single ball in the center. Microwave on medium for 1 1⁄4 to 3 minutes, or just until surface is dry, rotating the baking sheet or plate one-quarter turn every 30 seconds. Remove the parchment paper with cookies to a countertop. Let cool. Repeat with the remaining dough.
