Microwaved Cocoa Muffins

  • 1 cup all-purpose flour
  • ⅔ cup sugar
  • ¼ cup unsweetened cocoa powder
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ cup whole milk
  • ¼ cup vegetable oil
  • 1 large egg, lightly beaten
  • ½ cup chopped walnuts


  • In a bowl, combine the flour, sugar, cocoa, baking powder, and salt. Mix together the milk, oil, and egg in another bowl, and then add all at once to the flour mixture. Stir until just moistened. Fold in the nuts. Use half of the batter to fill 7 paper muffin cups half-full.
  • Place the cups in a microwave proof cupcake or muffin pan. Microwave on high for 2 to 2½ minutes, or until the top springs back slightly when touched. Repeat with the remaining batter. Serve warm.
