Middle Eastern Chickpea Purée
Also known as hummus, chickpea (or garbanzo bean) purée is a versatile condiment that can be used as a dip or spread with anything from vegetables to breads to meats.

Ingredients
- 6 cloves garlic, peeled
- 1⁄2 tsp. salt
- 1 can (15 oz.) chickpeas, drained and rinsed
- 1⁄3 cup tahini
- 2 Tbsp. lemon juice
- 2 Tbsp. olive oil
- 1⁄2 tsp. ground cumin
Directions
- Purée the garlic and salt in a food processor. Add the chickpeas and purée to a paste. Add the remaining ingredients and process until smooth, scraping down the sides of the bowl.
- Transfer the finished purée into a bowl and serve.
