Middle Eastern Glazed Carrots

Ingredients

  • 4 cups sliced carrots
  • 2 tsp. canola oil
  • 2 tsp. unsalted butter
  • ¼ tsp. ground coriander
  • ¼ tsp. ground cumin
  • ¼ tsp. turmeric
  • ⅛ tsp. ground cinnamon
  • ⅛ tsp. crushed dried mint
  • 2 tsp. granulated sugar
  • ⅛ tsp. freshly ground black pepper

Directions

  • Put the carrots in a microwave-safe casserole dish. Cover and microwave on high for 3 minutes; turn the dish. Microwave on high for 4 minutes or until the carrots are tender.
  • Bring a large, deep nonstick sauté pan to temperature over medium heat. Add the oil, butter, coriander, cumin, turmeric, cinnamon, and mint; sauté the spices for 1 minute. Add the carrots and stir to mix. Sprinkle the sugar and pepper over the carrots and stir-fry until the carrots are heated through and the sugar forms a glaze.
