Mini Air Fryer Potato Skins

Ingredients
- 6 Red Potatoes, scrubbed clean
- Non-Stick Extra Virgin Olive Oil Cooking Spray
- 1⁄2 tsp. salt, divided
- 3⁄4 cup Shredded Cheddar Jack Cheese
- 4 slices Fully Cooked Hardwood Smoke Flavor Traditional Bacon, crumbled
- 1⁄4 cup sour cream
- 2 tbsp. green onion, chopped
Directions
- Heat air fryer to 400°F.
- Spray exterior of potatoes with olive oil and season with ½ teaspoon salt. Place in air fryer and cook for 15-20 minutes or until potatoes are tender when poked with a paring knife. Allow potatoes to cool until barely warm to the touch. Potatoes can also be left to cool completely and refrigerated for up to 2 days before using.
- Cut potatoes in half and scoop out centers leaving about ¼” shell. Save the potato interiors for another use.
- Spray cut sides of potato with additional olive oil. Place in a single layer in air fryer basket.
- Cook for 8-10 minutes or until potatoes are crisp. Top each evenly with cheese and bacon pieces. Cook an additional 1-2 minutes until cheese is melted.
- Top each potato with a small dollop of sour cream and a sprinkle of green onions.
- Refrigerate leftovers.
