Mini Bat Bites

Make these cute chips and queso-inspired Halloween bats for a party or as a special Halloween lunchbox treat.

Ingredients

  • 8 oz. cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 can (4 oz.) chopped green chiles, drained and patted dry
  • 1⁄2 tsp. garlic powder
  • 1⁄4 tsp. onion powder
  • 1⁄4 cup poppy seeds
  • 9 blue corn chips, broken in half
  • 9 small green olives with pimentos, cut into thin slices if desired

Directions

  • In a bowl, stir together cream cheese, cheddar cheese, green chiles, garlic and onion powders.
  • Measure out about 1 tablespoon of the mixture and form into a ball. Repeat with remaining mixture. Roll balls in poppy seeds to coat completely. Refrigerate cheeseballs for at least 30 minutes or until ready to serve.
  • Place two tortilla chip halves on each ball for bat wings. Place 2 olive slices on each ball for eyes, if desired.
  • Refrigerate leftovers.
