Mini Cheese Balls

These cheese balls all use the same base but are dipped in four different finishes.

Ingredients

  • 8 oz. cream cheese, room temperature
  • 4 oz. goat cheese, room temperature
  • 2 tbsp. sour cream
  • 1⁄4 tsp. salt
  • 1⁄4 tsp. pepper
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp. finely chopped parsley
  • 2 tbsp. finely chopped dill
  • 2 tbsp. finely chopped chives
  • 1⁄2 cup cooked, crumbled bacon
  • 1 tsp. smoked paprika
  • 1⁄2 cup everything bagel seasoning
  • 1⁄2 cup chopped pistachios
  • Crackers or bread

Directions

  • Line baking sheet with parchment paper.
  • In large bowl with hand mixer or in bowl of stand mixer fitted with paddle attachment, add cream cheese, goat cheese and sour cream. Beat until well combined. Add salt and pepper, then fold in cheddar cheese.
  • Use clean hands to roll mixture into 20 even-size balls. Place on prepared baking sheet and refrigerate 30 minutes.
  • Prepare four separate bowls for finishes. In first bowl, combine parsley, dill and chives. In second bowl, mix bacon with smoked paprika. In third bowl, place everything bagel seasoning. In fourth bowl, add pistachios.
  • Place five cheese balls in each bowl of finishes; toss and press lightly to coat.
  • Serve with your favorite crackers or bread, refrigerating any leftovers.
