Mint-Butter Sauce for Lamb
This is wonderful with any of the lamb recipe. It is also good with chicken.

- ½ cup unsalted butter
- 2 tsp. minced chives
- ¾ cup fresh chopped mint leaves (loosely packed)
- ½ cup white (dry) vermouth
- 2 Tbsp. lemon juice
- 1 tsp. salt
- ½ tsp. ground black pepper
- Heat the butter in a saucepan and add the herbs. Add the rest of the ingredients and bring to a boil. Serve warm.
