Mint-Butter Sauce for Lamb

This is wonderful with any of the lamb recipe. It is also good with chicken.

  • ½ cup unsalted butter
  • 2 tsp. minced chives
  • ¾ cup fresh chopped mint leaves (loosely packed)
  • ½ cup white (dry) vermouth
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • ½ tsp. ground black pepper


  • Heat the butter in a saucepan and add the herbs. Add the rest of the ingredients and bring to a boil. Serve warm.
