Minted Sweet Peas
Shelling peas is one of the great pleasures of springtime cooking. A trick to opening them is to bend a piece of pod inside out until it snaps, then peel back the tough outer skin like you would the backing of a self-adhesive sticker.

- 2 cups shelled fresh peas (about 2 lbs. unshelled)
- ½ tsp. sugar
- 2 Tbsp. butter
- ½ tsp. salt
- ½ tsp. ground black pepper
- 3 Tbsp. chopped fresh mint leaves
- In a medium saucepan over medium heat, simmer the peas and sugar until bright green and tender, about 5 minutes; drain. Toss peas with butter, salt, pepper, and mint.
