Minty Fruit Chutney
Only make this chutney with fresh peaches and mint in season. Use local produce when possible.

- 5 peaches, peeled and diced
- 2 sprigs mint, chopped
- 1 shallot, peeled and minced
- ½ tsp. ground black pepper
- ½ cup peach nectar (or substitute peach juice)
- Mix together all the ingredients. Serve immediately or refrigerate for up to 3 days.
