Miso Baked Cod
This cod bakes up browned and sweet with deep flavor. You can find the mirin and miso paste in the international and refrigerated aisles of your grocery store.

- 1 1⁄2 lbs. cod, cut into 4 even pieces
- 1⁄4 cup sake
- 1⁄4 cup mirin
- 1⁄4 cup white miso paste
- Place the cod, sake, mirin, and miso paste in a large zip-top bag and gently shake so that the cod is evenly coated with the marinade. Refrigerate the cod overnight.
- Preheat the oven to 400°F and spray a 9-by-13-inch casserole dish lightly with nonstick spray. Gently shake the excess marinade off of the fish and place it in the prepared casserole dish.
- Bake the cod until it is browned and flakes easily with a fork, 10 to 15 minutes.
