Mojo Verde

This herb sauce originated in the Canary Islands, where it’s often served at tapas bars.

  • 12 cloves garlic, peeled
  • 1 cup cilantro leaves
  • ½ tsp. cumin
  • ¾ cup white wine vinegar
  • 1 cup olive oil
  • Salt to taste


  • In a food processor, combine garlic, cilantro, cumin, and vinegar.
  • Pulse until finely chopped. With motor running, add olive oil in a thin stream until mixture is thick and blended. Add salt to taste.
