Molasses Banana–Cranberry Bread
Tart cranberries add great color and flavor to this marvelous velvety banana bread. Itʼs great for the holidays!

- 1⁄2 cup butter, softened
- 1⁄2 cup brown sugar
- 1⁄4 cup molasses
- 1 large egg
- 1 cup mashed banana
- 2 cups all-purpose flour
- 1⁄4 cup whole wheat flour
- 2 tsp. baking powder
- 1⁄2 tsp. baking soda
- 1⁄4 tsp. salt
- 1⁄2 cup whole fresh cranberries
- 1 tsp. cinnamon
- Preheat oven to 350°F. Spray a 9-by-5-inch pan with baking spray containing flour and set aside. In large bowl, combine butter and brown sugar and beat until fluffy. Add molasses, egg, and mashed banana and beat well.
- In medium bowl combine flour, whole wheat flour, baking powder, baking soda, salt, and 1 teaspoon cinnamon. Add half to banana mixture and beat well. Add remaining flour mixture and beat just until blended. Fold in cranberries and spoon into prepared loaf pan. Bake for 40 to 45 minutes or until a toothpick inserted into the middle comes out with only a few moist crumbs. Cool on wire rack and store in plastic food bag.
