Mom's Cucumber Salad

Many moms make a salad similar to this in the summer, when the garden produces an overabundance of cucumbers.

  • 1 medium or 2 small cucumbers, sliced into thin rounds
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
  • 2 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • ¼ cup chopped fresh dill
  • 1 large garlic clove, smashed


  • Place the cucumbers in a colander and season with salt and pepper. Let drain for 20 minutes.
  • Squeeze the cucumbers gently to get a bit more water out of them. In a bowl, toss the cucumbers with the lemon juice, olive oil, dill, and garlic. Adjust seasoning if necessary with salt and pepper. Serve cold.
