Monterey Jack and Jalapeño Pepper Panini
For this southwestern version of a classic Italian grilled sandwich, make a quick jalapeño pesto and slather it on a crispy ciabatta roll. Cover it with slices of tomato and Monterey Jack cheese and then grill until the cheese oozes out.

- 2 Tbsp. pickled jalapeño peppers, chopped
- 1 tsp. olive oil
- Pinch of salt
- 3 slices Monterey jack cheese, sliced
- 1 ciabatta roll, split horizontally
- 3 slices fresh tomato
- Preheat the panini press. In a small bowl, combine chopped jalapeños with olive oil, and salt. Spread mixture onto bottom half of ciabatta. Layer with tomato slices, cheese, and bread. Place on the hot panini press, close lid, and cook for 3–5 minutes. Remove from press, cut in half, and serve warm.
