Mushroom-Stuffed Sweet Potatoes
For a hearty and healthy meal, serve these loaded sweet potatoes that are filled to the brim with savory sautéed veggies.

- 2 medium sweet potatoes
- 2 clove garlic, minced
- ½ sweet onion, sliced
- 1½ cups sliced bella mushrooms
- 5 strips vegan bacon
- 1 Tbsp. coconut oil
- Pierce sweet potatoes and microwave until tender (about 7 minutes).
- In a large skillet, add garlic, onions, mushrooms, and vegan bacon. Cook over medium-high heat for 10 minutes until onions and mushrooms are tender and vegan bacon is browned. Melt coconut oil in pan, then stir to coat.
- Make a cut lengthwise partially through each sweet potato. Spoon mushroom-onion mixture into sweet potatoes and serve.
