Mustard Pickles

  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 2 Tbsp. mustard seeds
  • 1 cup cider vinegar
  • 3 cups peeled and chopped small cucumbers
  • 1 cup thinly sliced white onion


  • Mix salt, sugar, and mustard seeds together; add to a quart jar along with cider vinegar.
  • Add cucumbers and onions to vinegar mixture, filling to the point where all cucumbers remain covered with the liquid.
  • Refrigerate and allow cucumbers to marinate for at least 2 weeks.
