Naturally Sugar-Free Cinnamon Almond Energy Balls

- 3⁄4 cup chopped dates
- 3⁄4 cup almond butter
- 1⁄2 cup maple syrup
- 1 1⁄2 tsp. vanilla extract
- 1⁄2 tsp. ground cinnamon
- 1⁄8 tsp. salt
- 2 1⁄2 Tbsp. vanilla protein powder
- 1⁄3 cup oats
- 1 Tbsp. flaxseeds
- In the bowl of a food processor, combine the dates, almond butter and maple syrup and pulse several times until smooth. Add the vanilla, cinnamon, and salt. Pulse several more times.
- Add protein powder, and fully incorporate. If “dough” is too oily, add another teaspoon of protein powder. Add the oats and flaxseeds and mix well. Roll into small balls. Enjoy immediately or store covered in the refrigerator. Balls will firm up slightly when chilled.
