Naturally Sugar-Free Pumpkin Spice Muffins

Warm, moist, and comforting, these muffins are wonderful served with butter and honey or paired with an afternoon cup of tea.

Ingredients

  • 1 cup canned pumpkin
  • 1⁄3 cup grapeseed oil
  • 2 large eggs
  • 1 cup powdered honey
  • 1⁄2 cup maple sugar
  • 1 tsp. molasses
  • 1 tsp. vanilla extract
  • 1⁄2 tsp. baking soda
  • 3⁄4 tsp. baking powder
  • 1⁄2 tsp. salt
  • 1⁄2 Tbsp. pumpkin pie spice
  • 2 tsp. ground cinnamon
  • 1⁄8 tsp. ground nutmeg
  • 1 1⁄2 cups spelt flour

Directions

  • Preheat oven to 350°F. Line a muffin pan with muffin liners and spray liners with cooking spray.
  • In a large mixing bowl, add all ingredients and whisk until combined. Pour batter into prepared muffin liners, filling 3⁄4 of the way full.
  • Bake for 20 minutes or until a toothpick poked into the center of a muffin comes out clean. Let muffins sit in pan for 2 to 3 minutes before removing to cool on rack.
