Nilla Wafers

These are perfect cookies to pair with traditional banana pudding or to eat with a glass of milk. An easy way to get these shaped and sized correctly is to use a pastry bag and pipe them onto the baking sheets. Make them quarter sized for the best results.

Ingredients

  • ½ cup unsalted butter
  • 1 cup sugar
  • 1 large egg
  • 1 Tbsp. vanilla extract
  • 1⅓ cups all-purpose flour
  • ¾ tsp. baking soda
  • ¼ tsp. salt
  • ⅛ tsp. ground nutmeg

Directions

  • Preheat oven to 350°F.
  • Cream butter and sugar. Beat in egg and vanilla. Combine flour, baking soda, salt, and nutmeg; blend into butter mixture.
  • Drop by teaspoon-sized cookie scoop onto ungreased baking sheets.
  • Bake 12–15 minutes, or until edges are brown.
