No-bake Almond Butter Bars
Creamy, delicious, rich and filling, these No-bake Almond Butter Bars are gluten-free and can be made vegan.

Ingredients
- 1 cup + 2 Tbsp. Simple Truth Organic™ Smooth Almond Butter, divided
- 1 cup super-fine almond flour
- 1⁄4 cup Simple Truth Organic™ Honey (or agave nectar, if making vegan)
- 1⁄4 tsp. salt
- 2 tbsp. + 1 Tbsp. Simple Truth Organic™ Liquid Coconut Oil, divided
- 1⁄2 cup Simple Truth Organic™ Dark Chocolate Baking Chips
- flaky salt for garnish
Directions
- In a medium bowl, beat 1 cup almond butter, almond flour, honey or nectar, 2 Tbsp. coconut oil and salt until combined and smooth.
- Line a loaf pan with wax paper and spread the almond mixture into a flat layer.
- In a small bowl, melt the chocolate chips in the microwave until smooth when stirred. Add the remaining 2 Tbsp. almond butter and 1 Tbsp. coconut oil and stir. Pour the chocolate mixture over the almond layer.
- Chill for 1 hour or until set.
- Pull the wax paper up gently to remove the bars and slice into 12 servings. Garnish with flaky sea salt, if desired. Store any leftovers in the refrigerator.
