No-bake Key Lime Pie Jars

Cute mini pie jars are perfect for packing in a picnic basket or lunch box for a sweet treat on the go.

Ingredients
- 12 Simple Truth™ Gluten Free Vanilla Sandwich Cookies
- 2 tbsp. butter, melted
- 1⁄2 cup heavy cream
- 8 oz. cream cheese, softened
- 1⁄2 cup sweetened condensed milk
- 2 1⁄2 limes or key limes, freshly squeezed
- 1 tsp. lime zest
- Whipped cream for serving, if desired
Directions
- Place cookies in the bowl of a food processor; pulse to fine crumbs. Add melted butter. Divide crumb mixture evenly between six half-pint wide-mouth canning jars; press firmly into bottom.
- In a chilled bowl beat whipping cream until stiff peaks form. Set aside.
- In another bowl beat cream cheese until smooth. Add sweetened condensed milk, lime juice and lime zest. Beat until combined.
- Fold whipped cream into lime mixture. Transfer to prepared jars.
- Cover and refrigerate at least 3 hours.
- Serve with additional whipped cream if desired.
- Refrigerate leftovers.
