No-bake Key Lime Pie Jars

Cute mini pie jars are perfect for packing in a picnic basket or lunch box for a sweet treat on the go.

Ingredients

  • 12 Simple Truth™ Gluten Free Vanilla Sandwich Cookies
  • 2 tbsp. butter, melted
  • 1⁄2 cup heavy cream
  • 8 oz. cream cheese, softened
  • 1⁄2 cup sweetened condensed milk
  • 2 1⁄2 limes or key limes, freshly squeezed
  • 1 tsp. lime zest
  • Whipped cream for serving, if desired

Directions

  • Place cookies in the bowl of a food processor; pulse to fine crumbs. Add melted butter. Divide crumb mixture evenly between six half-pint wide-mouth canning jars; press firmly into bottom.
  • In a chilled bowl beat whipping cream until stiff peaks form. Set aside.
  • In another bowl beat cream cheese until smooth. Add sweetened condensed milk, lime juice and lime zest. Beat until combined.
  • Fold whipped cream into lime mixture. Transfer to prepared jars.
  • Cover and refrigerate at least 3 hours.
  • Serve with additional whipped cream if desired.
  • Refrigerate leftovers.
