Baked side-dish puddings that can do double duty as dessert, such as rice pudding, bread pudding, and noodle pudding, are some of the old-fashioned comfort foods that are making a comeback.

- 4 Tbsp. butter, divided
- 2 cups wide egg noodles
- 2 large eggs
- ¼ cup sugar
- 1 cup cottage cheese
- ½ cup sour cream
- ¼ tsp. salt
- Heat oven to 350°F. Grease a medium baking dish with 1 Tbsp. butter.
- Cook egg noodles according to package directions. Toss with remaining 3 tablespoons of butter.
- In a large bowl, combine eggs, sugar, cottage cheese, sour cream, and salt; stir well. Add noodles and toss to coat. Transfer to prepared baking dish. Cover with foil.
- Bake for 30 minutes, remove foil and continue baking about 15 more minutes, or until fully set in the middle and deeply golden. Allow to rest 10 minutes before cutting into portions.
