Not So Sloppy Joes

Ingredients

  • 1 1⁄4 pounds Simple Truth Organic™ Ground Beef 85/15
  • Coarse salt and freshly ground pepper, to taste
  • 1 teaspoon garlic, minced
  • 1 teaspoon Simple Truth Organic™ Ground Cumin
  • 1 can (14.5 oz.) Simple Truth Organic™ Diced Tomatoes
  • 2 tablespoons brown sugar
  • 1 tablespoon cider vinegar
  • 2 tablespoons Simple Truth Organic™ Tomato Paste
  • 1 1⁄2 cups water
  • 4 hoagie rolls, split in half
  • 1 avocado, pitted, peeled and sliced
  • 1⁄2 white onion, sliced

Directions

  • Cook the beef in a large skillet over medium-high heat, breaking apart big pieces with a wooden spoon, until lightly browned, about 5-6 minutes. Drain fat from the meat and season with salt and pepper. Add the garlic and cumin and cook for another minute or two.
  • Add the tomatoes, brown sugar, vinegar, tomato paste and water. Reduce heat to medium-low and simmer until thickened, about 15 minutes.
  • Spoon the beef mixture evenly over the bottom halves of the rolls, top with avocado, onion and the rest of the rolls, and serve.
