Any nut can be used with success in this easy recipe. Add a variation to this cookie by substituting coconut for the chopped nuts.

Makes: 24 cookies

Ingredients

  • 2 egg whites
  • ⅛ tsp. salt
  • ½ cup sugar
  • ½ tsp. vanilla extract
  • ½ cup finely chopped walnuts

Directions

  • Preheat oven to 275°F. Line a baking sheet with parchment.
  • Beat egg whites and salt until soft peaks form. Gradually add sugar; beat until stiff, glossy peaks form. Beat in vanilla. Fold in nuts. Drop by teaspoonfuls on baking sheet.
  • Bake 40–60 minutes.
