Any nut can be used with success in this easy recipe. Add a variation to this cookie by substituting coconut for the chopped nuts.

- 2 egg whites
- 1⁄8 tsp. salt
- 1⁄2 cup sugar
- 1⁄2 tsp. vanilla extract
- 1⁄2 cup finely chopped walnuts
- Preheat oven to 275°F. Line a baking sheet with parchment.
- Beat egg whites and salt until soft peaks form. Gradually add sugar; beat until stiff, glossy peaks form. Beat in vanilla. Fold in nuts. Drop by teaspoonfuls on baking sheet.
- Bake 40 to 60 minutes.
