Oat Bran Muffins with Dried Cherries

Make sure to carefully pick over the dried cherries to make sure the pits have all been removed. These little muffins have a wonderful flavor and texture, and they freeze beautifully.

  • 1 cup oatmeal
  • 1 cup oat bran
  • 2⁄3 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 1⁄8 tsp. salt
  • 1 cup buttermilk
  • 1⁄2 cup safflower oil
  • 2 large eggs
  • 1 1⁄2 cups dried cherries


  • Preheat oven to 375°F. Line 24 muffin cups with paper liners and set aside. In large bowl, combine oatmeal, oat bran, brown sugar, flour, baking powder, baking soda, and salt and mix well. In medium bowl, combine buttermilk, oil, and eggs and beat well. Add liquid ingredients to dry ingredients along with dried cherries and mix just until blended.
  • Fill prepared muffin cups three-quarters full and bake at 375°F for 18 to 20 minutes or until golden brown and tops spring back when lightly touched with finger. Cool on wire rack.
