Oat Crackers

This is a rustic snack cracker with the goodness of oats. Serve it with hot dips or your favorite stews.

Ingredients

  • 1½ cups coarsely ground rolled oats
  • 1 cup whole-wheat flour
  • 1 tsp. salt
  • 2 tsp. sugar
  • 3 Tbsp. vegan margarine
  • ½ cup water
  • 2 Tbsp. olive oil

Directions

  • Combine oats, flour, salt, and sugar in a large bowl. Cut in margarine with a large fork or pastry cutter until crumbly. Mix in water and olive oil. Shape into a ball, cover, and refrigerate for 1 hour.
  • Preheat oven to 350°F. Place dough onto a lightly greased, rimless baking sheet. Roll dough to ⅛" thick. Score dough with a knife in desired cracker shapes. Bake 10–15 minutes, or until lightly browned.
  • Cool completely in the pan. Break along score lines. Store in an airtight container.
