Oatmeal Banana Bread

You can replace the soy milk with yogurt if you prefer.

Ingredients

  • 1½ cups all-purpose flour
  • 1½ tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • ¾ cup oatmeal
  • 1 cup mashed bananas
  • ⅔ cup sugar
  • ½ cup soy milk
  • ¼ cup walnut oil
  • 1 tsp. vanilla extract
  • 2 large eggs

Directions

  • Preheat oven to 350°F. Spray an 8" x 4" loaf pan with the cooking spray.
  • Mix flour, baking powder, baking soda, salt, and oatmeal in a large bowl; set aside. Mix the mashed banana, sugar, soy milk, oil, vanilla, and eggs in another small bowl. Add the wet ingredients to the dry ingredient and mix until just combined
  • Spoon batter into the prepared pan and bake for 50 minutes or until light golden brown on top. Cool on a wire rack for 20 minutes. Remove the bread from the pan and cool thoroughly on the rack before serving.
