Oatmeal, Buttermilk, and Banana Pancakes

These pancakes are very hearty. The bananas are a perfect addition.

  • ¼ cup instant oatmeal
  • ½ cup buttermilk
  • 1 large egg, beaten
  • 3 Tbsp. butter, divided
  • ¼ cup all-purpose flour
  • 2 tsp. granulated sugar
  • ½ tsp. baking powder
  • 1 medium banana, peeled and sliced


  • Mix together the oatmeal and the buttermilk, and let stand for 1 hour.
  • Add egg, 1 tablespoon melted butter, flour, sugar, and baking powder to the oatmeal mixture. Let stand for 10 minutes.
  • Coat a nonstick pan with the remaining butter and pour ¼ cup of the batter into the pan. Cook over medium heat until the top side is evenly peppered with bubbles. Flip over and cook for another 2 minutes. Repeat with the remaining batter. Serve with the bananas on top.
