Oatmeal Buttermilk Pancakes

To make these pancakes sugar-free, substitute Splenda for the sugar.

  • 1 cup quick-cooking oats
  • ½ cup all-purpose flour
  • ¼ cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ⅛ tsp. salt
  • 2 cups low-fat buttermilk
  • ¼ cup Egg Beaters


  • Combine oatmeal, flour, sugar, baking powder, baking soda, and salt in a bowl.
  • Whisk together buttermilk and Egg Beaters in a small bowl. Pour mixture over dry ingredients and stir together until just blended.
  • Spray a large griddle or skilled with nonstick cooking spray. Pour ¼ cup pancake batter on hot griddle. Cook until bubbles appear and edges are brown. Flip and cook until done. Repeat with remaining batter.
