Oatmeal Buttermilk Pancakes
To make these pancakes sugar-free, substitute Splenda for the sugar.

- 1 cup quick-cooking oats
- ½ cup all-purpose flour
- ¼ cup sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- ⅛ tsp. salt
- 2 cups low-fat buttermilk
- ¼ cup Egg Beaters
- Combine oatmeal, flour, sugar, baking powder, baking soda, and salt in a bowl.
- Whisk together buttermilk and Egg Beaters in a small bowl. Pour mixture over dry ingredients and stir together until just blended.
- Spray a large griddle or skilled with nonstick cooking spray. Pour ¼ cup pancake batter on hot griddle. Cook until bubbles appear and edges are brown. Flip and cook until done. Repeat with remaining batter.
