Oatmeal and Buttermilk Pancakes
These are a heartier version of a breakfast-time favorite. Top them with syrup or fresh fruit.

- 1 cup oat bran
- 1⁄2 cup all-purpose flour
- 1⁄4 cup sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1⁄8 tsp. salt
- 2 cups buttermilk
- 1 large egg white
- Combine oat bran, flour, sugar, baking powder, baking soda, and salt in a bowl.
- Whisk together buttermilk and egg whites in a small bowl. Pour mixture over dry ingredients and stir together until just blended.
- Prepare a hot griddle with butter-flavored spray. Pour 1⁄4 cup pancake batter on the griddle. Cook until bubbles appear and edges are brown. Flip and cook until done.
