Oatmeal with Ricotta and Raisins
This warm and comforting oatmeal is best served on a chilly day. Top with ground cinnamon for a little extra spice.

Ingredients
- 1 cup water
- 1⁄2 cup rolled oats (not the quick-cooking type)
- 3 tsp. apple juice
- 3 Tbsp. ricotta cheese
- 1 tsp. granulated sugar
- 2 Tbsp. raisins
Directions
- Bring the water to a boil. Stir in the oats. Cover, reduce heat to low, and let the oats simmer for 15 minutes or until the water is nearly evaporated.
- While the oats are cooking, stir the apple juice into the ricotta cheese. Stir the ricotta mixture and sugar into the cooked oatmeal.
- Transfer the porridge to 2 small bowls and top with raisins. Top with raisins. Serve hot.
