Old-Fashioned Popovers

Bake alone in the oven for best results. Serve immediately and hot!

  • 1 cup all-purpose flour
  • 1⁄2 tsp. salt
  • 2 large eggs
  • 1 cup whole milk
  • 1 Tbsp. melted vegetable shortening


  • Preheat oven to 475°F. Grease a popover pan or 6 custard cups (6 ounces).
  • In a separate bowl, sift together the flour and salt, beat the eggs well and add the milk to them. Add the flour mixture and beat with an electric mixer on medium for 1 minute. Add the melted shortening and beat 1 minute more.
  • Fill the prepared cups half full. Bake at 475°F for 15 minutes, then reduce heat to 350°F and continue baking 25 to 30 minutes longer, until well browned. A few minutes before they are to be removed from the oven, carefully prick each popover with a fork to allow steam to escape. Remove immediately from the pans.
