Olive Oil Crackers
Enjoy these crackers with hummus, fresh fruit, and a glass of wine for a light meal!

- 3 cups all-purpose flour
- 1 tsp. salt
- ⅓ cup extra-virgin olive oil
- 1 cup warm water
- 2 Tbsp. olive oil
- Sift flour and salt together in a large bowl. Mix in the extra-virgin olive oil and water. Either by hand on a floured surface, or in a stand mixer with a dough-hook attachment, knead dough for 5–7 minutes.
- Shape dough into a ball, adding more flour as necessary, so dough is not too sticky. Cut into 20 same-sized pieces then form each piece into a ball. Rub a few drops of olive oil on each ball, cover with a dish towel, and allow to rest at room temperature for 1 hour.
- Preheat oven to 450°F. Roll each dough ball to approximately ⅛" thick and place on a floured baking sheet. Prick each cracker with fork. Bake 10–12 minutes, or until golden brown. Cool completely. Store in an airtight container
