One-Step Slow Cooker Chicken Chili

A tasty alternative to beef chili. Save leftover barbecued or roasted chicken from another meal to use here.

Ingredients

  • ½ cup diced onion
  • ½ cup diced bell pepper
  • 2 cups chopped cooked chicken
  • 2 cloves garlic, peeled and minced
  • 1 can (15 oz.) kidney beans, rinsed and drained
  • 2 cups vegetable broth
  • 1 Tbsp. chili powder
  • ½ Tbsp. chipotle powder
  • ½ Tbsp. ground cumin
  • 1 tsp. dried thyme
  • 1 Tbsp. dried oregano
  • 1 can (15 oz.) diced tomatoes, drained
  • 1 Tbsp. tomato paste
  • 1 Tbsp. cider vinegar
  • 2 tsp. salt

Directions

  • In a 4-quart slow cooker, add all ingredients. Cover and cook on low heat for 5 hours.
