Onion Sautéed Chickpeas
These chickpeas can be a standalone side or a filling in a pita pocket with the added Greek fixings of spinach, pepperoncini, cucumbers, tomatoes, Kalamata olives, and feta.

- ½ medium red onion, peeled and finely sliced
- 2 Tbsp. olive oil
- 1 can (15 oz.) chickpeas, drained and rinsed
- ½ tsp. sea salt
- 1 Tbsp. garlic powder
- In a medium saucepan, sauté onions in olive oil over medium-high heat 2 minutes. Add chickpeas and sauté 2–4 minutes.
- Season with salt and garlic powder and serve.
