Orange-Pecan Muffins

If you love the taste of orange, add 1⁄4 cup of orange marmalade and/or 1⁄4 cup of grated orange rind.

  • cooking spray
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1⁄3 cup brown sugar
  • 4 tsp. baking powder
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. baking soda
  • 2 large eggs
  • 3⁄4 cup yogurt
  • 1⁄4 cup orange juice
  • 1⁄4 cup butter, melted
  • 3⁄4 cup chopped pecans


  • Preheat oven to 400°F. Prepare a muffin tin with light cooking spray.
  • Combine flours, brown sugar, baking powder, salt, and baking soda in a large bowl. Beat eggs in a small bowl. Stir yogurt, orange juice, and melted butter in with the eggs. Add the wet ingredients to the dry ingredients, mixing gradually. Fold in pecans.
  • Spoon batter into muffin tins and bake for 20 minutes or until muffin tops are golden.
