This vinaigrette goes well with grilled chicken salads or as a sauce to accompany a grilled chicken entrée.

- ¼ cup champagne vinegar
- 3 Tbsp. fresh-squeezed orange juice
- 1 Tbsp. Dijon mustard
- 2 tsp. grated orange rind
- ½ tsp. Tabasco sauce
- ½ tsp. salt
- ½ tsp. freshly ground black pepper
- ½ cup olive oil
- Whisk together the vinegar, orange juice, zest, Tabasco, and salt in a mixing bowl. While whisking, slowly add in the olive oil at a drizzle. Adjust seasoning to taste. The vinaigrette will keep for 1 to 2 weeks in the refrigerator. Whisk before use if separated.
