Oranges with Fresh Greens

This is a delicious salad to make in the winter when citrus fruit is at its best. The sweet and creamy dressing provides a nice contrast to the bitter arugula. For the fresh mint you can substitute one teaspoon of dried mint or the fresh herbs of your choice.

Ingredients

  • 3 cups arugula
  • ½ cup pine nuts
  • ½ cup orange juice
  • ½ cup olive oil
  • ½ tsp. kosher salt
  • ¼ tsp. cayenne pepper
  • 1 Tbsp. chopped fresh mint
  • ½ cup orange segments
  • ½ cup grapefruit segments
  • 1 cup chopped apple

Directions

  • Rinse the arugula under water. Dry the lettuce with a salad spinner or pat dry with a clean paper towel.
  • To create the dressing, use a blender or food processor and blend together pine nuts, orange juice, olive oil, salt, and cayenne pepper until smooth. Add the mint last and briefly pulse.
  • Arrange the arugula on salad plates. Top with orange, grapefruit, and apple. Drizzle the dressing over the salad and serve.
