Oven-Baked New Potatoes

- 1 lb. small new potatoes, quartered
- 1⁄4 cup lemon juice
- 1 tsp. olive oil
- 1 tsp. salt
- 1⁄4 tsp. ground black pepper
- Preheat oven to 350°F.
- Arrange potatoes in a 13-by-9-inch ovenproof casserole dish. Combine lemon juice, olive oil, salt, and pepper, and pour over potatoes.
- Bake for 30 to 40 minutes or until potatoes are tender, turning 3 to 4 times to baste.
