Oven-Braised Chicken

  • 1 chicken (3 lbs.) cut up
  • ⅓ cup all-purpose flour
  • ½ tsp. paprika
  • 1 tsp. salt
  • ½ tsp. ground black pepper
  • 2 Tbsp. vegetable oil


  • Preheat oven to 350°F.
  • Rinse the chicken pieces and pat dry. Place the flour and seasonings in a plastic food bag and dredge the chicken pieces in the mixture, two pieces at a time. As they are completed, place on a platter. In a large skillet, heat about the oil oil over medium heat. Brown the chicken pieces on all sides, about 15 minutes.
  • Remove the chicken to a large baking dish or a roaster. Deglaze the skillet with about ½ cup water and add to the baking dish. Cover and bake for about 1 hour, or until the juices run clear. Check during baking and add more water if necessary.
