Oven French Fries

  • 6 medium potatoes (2 lbs.)
  • Cooking oil spray
  • 1 tsp. salt, divided


  • Preheat oven to 500°F.
  • Peel potatoes and halve lengthwise. Place the halves cut side down on the cutting board and cut lengthwise into 1⁄4-inch strips. As the strips are cut, place them in a bowl of ice water to crisp. When ready to cook, drain and dry well, using paper towels. (If potatoes are not dry they will not brown properly.)
  • Spray two cookie sheets or jellyroll pans with cooking spray. Arrange the potatoes on the sheets and spray the potatoes with cooking oil spray. Sprinkle with half of the salt and bake about 10 minutes, then remove from the oven, turn potatoes over, and spray and salt the second side. Return to the oven for another 10 to 15 minutes. Fries are done when they are fork tender and golden brown.
