Oven-Roasted Sweet Potatoes
This recipe can be combined with roasted white potatoes to add depth of flavor and color.

- 1⁄4 cup raisins
- 3 lbs. sweet potatoes
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1⁄2 tsp. ground black pepper
- 1 Tbsp. fresh thyme leaves
- Preheat oven to 400°F. Place raisins in a bowl and cover with hot water. Let soak for 5 minutes.
- Peel sweet potatoes, dice into 1-inch pieces, and put them in a bowl. Toss diced sweet potatoes with drained raisins, oil, salt, pepper, and thyme. Spread out seasoned sweet potatoes on a sheet pan.
- Bake for 30 minutes.
