Oven-Roasted Tomatoes

This is an excellent side dish to accompany eggs. The tomatoes pick up the flavors of any herbs used with them, and you can add butter, cheese, and spices to add extra flavor.

Ingredients

  • 1 large tomato
  • 1 tsp. olive oil
  • 1 tsp. chopped thyme
  • ⅛ tsp. salt
  • ⅛ tsp. ground black pepper

Directions

  • Preheat oven to 375°F.
  • Cut the tomato in half. Use a melon baller to remove seeds. Sprinkle with oil, thyme, salt, and pepper.
  • Individually nest the tomato halves in aluminum foil, leaving the top open. Place open-end up directly on the rack in the oven. Roast for 15 minutes.
