Paleo Baba Ganoush

Eggplant is a great choice when looking for a complex carbohydrate source. Be sure to cook it thoroughly.

  • 1 medium eggplant
  • 2 Tbsp. raw tahini paste
  • 1⁄4 cup lemon juice
  • 4 cloves garlic
  • 1 Tbsp. olive oil


  • Bake eggplant for 30 minutes at 350°F, then cool. Remove skin and any large seeds, then cut into 1-inch squares.
  • Place eggplant and all other ingredients into food processor and pulse until smooth.
  • Chill and serve.
