Paleo Baba Ganoush
Eggplant is a great choice when looking for a complex carbohydrate source. Be sure to cook it thoroughly.

- 1 medium eggplant
- 2 Tbsp. raw tahini paste
- 1⁄4 cup lemon juice
- 4 cloves garlic
- 1 Tbsp. olive oil
- Bake eggplant for 30 minutes at 350°F, then cool. Remove skin and any large seeds, then cut into 1-inch squares.
- Place eggplant and all other ingredients into food processor and pulse until smooth.
- Chill and serve.
