- 1 medium banana, peeled
- 1 large egg
- 3 Tbsp. coconut milk
- 1 Tbsp. coconut oil
- Mix the banana, egg, and coconut milk together in a blender. Batter should be thin.
- In a nonstick ceramic skillet heat coconut oil over medium heat until melted. Pour in the batter.
- Use a spoon, if needed, to spread the batter thinly in the pan. Once the bottom browns, flip with tongs or a spatula, and cook the other side until golden brown.
