Paleo Crepe

Quick and simple, this crepe cooks up into perfect, lacy pancakes. Serve with your favorite fillings—berries, cream, Nutella, and beyond!

Ingredients

  • 1 medium banana, peeled
  • 1 large egg
  • 3 Tbsp. coconut milk
  • 1 Tbsp. coconut oil

Directions

  • Mix the banana, egg, and coconut milk together in a blender. Batter should be thin.
  • In a nonstick ceramic skillet heat coconut oil over medium heat until melted. Pour in the batter.
  • Use a spoon, if needed, to spread the batter thinly in the pan. Once the bottom browns, flip with tongs or a spatula, and cook the other side until golden brown.
