Paleo Italian Dressing
Try doubling this recipe and storing in a glass jar. It will keep for several days and is much better than supermarket dressings.

- ⅓ cup balsamic vinegar
- ½ tsp. dry mustard
- 1 tsp. lemon juice
- 2 cloves garlic, chopped
- 1 tsp. dried oregano or 1 Tbsp. fresh oregano leaves
- ½ tsp. kosher salt
- ½ tsp. ground black pepper
- ½ cup extra-virgin olive oil
- Place all ingredients except the oil in a blender. With the blender running on a medium setting, slowly pour the oil into the jar. Blend until very smooth. Serve immediately on salad or cover and store in the refrigerator for up to 7 days.
