Panini Press Pesto Shrimp

Whisk together a quick pesto marinade. Marinate the shrimp, grill, and serve.

  • 1 Tbsp. olive oil
  • 1 Tbsp. pesto
  • 1 clove garlic, peeled and minced
  • 1 tsp. lemon juice
  • ⅛ tsp. salt
  • ⅛ tsp. red pepper flakes
  • 12 jumbo shrimp (½ lb.), peeled and deveined


  • In a medium bowl, whisk together the olive oil, pesto, garlic, lemon juice, salt, and pepper flakes. Add shrimp and marinate for about 10 minutes.
  • Preheat the panini press. Pour contents of bowl onto heated press. Close lid and cook for 2–4 minutes. Remove from press and serve.
