Panini Press Pesto Shrimp
Whisk together a quick pesto marinade. Marinate the shrimp, grill, and serve.

- 1 Tbsp. olive oil
- 1 Tbsp. pesto
- 1 clove garlic, peeled and minced
- 1 tsp. lemon juice
- ⅛ tsp. salt
- ⅛ tsp. red pepper flakes
- 12 jumbo shrimp (½ lb.), peeled and deveined
- In a medium bowl, whisk together the olive oil, pesto, garlic, lemon juice, salt, and pepper flakes. Add shrimp and marinate for about 10 minutes.
- Preheat the panini press. Pour contents of bowl onto heated press. Close lid and cook for 2–4 minutes. Remove from press and serve.
