Papaya Parfait (Creme de Papaya)
This popular Brazilian dessert is easy to make and perfect at the end of a summer meal. Use frozen papaya if you can’t find fresh fruit.

- 1½ cups papaya chunks
- 2 cups vanilla ice cream
- 1 Tbsp. fresh lime juice
- ½ cup crème de cassis (black currant liqueur), divided
- Mint leaves, for garnish
- Place the papaya, vanilla ice cream, lime juice, and ⅓ cup of the crème de cassis in a blender.
- Blend until smooth. Add a little bit of milk if the mixture is too thick to blend. Divide the mixture between 4 cups or glasses. Drizzle each with some of the remaining crème de cassis and garnish each with a mint leaf. Serve immediately.
