Papaya Parfait (Creme de Papaya)

This popular Brazilian dessert is easy to make and perfect at the end of a summer meal. Use frozen papaya if you can’t find fresh fruit.

  • 1 1⁄2 cups papaya chunks
  • 2 cups vanilla ice cream
  • 1 Tbsp. fresh lime juice
  • 1⁄2 cup crème de cassis (black currant liqueur), divided
  • Mint leaves, for garnish


  • Place the papaya, vanilla ice cream, lime juice, and 1⁄3 cup of the crème de cassis in a blender.
  • Blend until smooth. Add a little bit of milk if the mixture is too thick to blend. Divide the mixture between 4 cups or glasses. Drizzle each with some of the remaining crème de cassis and garnish each with a mint leaf. Serve immediately.
